A Holiday Recipe to Share

Well, friends, were cruising through this month of gratitude and today is a good day to be grateful for something chocolatey and delicious, don’t you think? Actually, there are few days (if any?) that there’s not something to be grateful for. Chocolate truffles, boys and girls! That’s what’s on the menu, and we took it upon ourselves to whip them up and munch on them while writing this post so as to give you a fair and accurate report.

We have one word for you… YUMMY!!!

And they are so easy to make! So, pull out your food processor and let’s do this!

Chocolate Truffles Recipe

« 1 cup ground almonds
« ¾ cup cacao
« 1/3 cup coconut nectar (maple syrup is a good substitute here)
« 1 Tbsp coconut oil
« Pinch of sea salt
« Shredded coconut

Grind up the raw almonds in the food processor first then add the rest of the ingredients except shredded coconut and mix really well. It may look dry but it works. Good cooks are tasting as they go so give it a taste! If you’re happy with what’s happening then scoop up a tablespoon or so into your hand and roll into a ball. Then roll each ball through the coconut. You’re done! These babies freeze well, so in the off chance that there are leftovers you can stick them in the freezer to be cold and preserved for a delicious snack on another day. Like, tomorrow.
